A modern take on the classic neighborhood parrilla, Madre Rojas focuses on sourcing the finest meats and wines from across Argentina. With care taken to the environment and promotion of biodiversity, the restaurant’s meats are selected with great respect to animal welfare. Madre Rojas has it all- from in-house made pickles to wagyu tallow fries to, of course, incredible meats. I suggest the ojo de bife, medium rare- or in Castellano, “jugoso.”
