Traveling the world is no easy feat- and jumping across time zones can become quite a challenge in itself. If you find yourself awake at odd hours, consider whipping up this French toast. It makes a perfectly indulgent meal, no matter the time of day!
I love making this recipe with my favorite Mexican cinnamon from Mercado El 100 in Mexico City. Orange blossom water is also a great addition if you have some on hand.
If you’re feeling extra awake and extra decadent, top your French toast with homemade nutella- yes, it’s very over-the-top and will take more effort… but I promise, it’s worth it!
Jet Lag Midnight French Toast
For the homemade nutella (optional):
- 200 grams hazelnuts, lightly roasted and skins removed
- 2 tablespoons cocoa powder
- 100 grams powdered sugar
- Vanilla, to taste
- 60 grams dark chocolate, melted
- 30 milliliters oil (I like to use a good olive oil for a more refined flavor)
- A pinch of salt
For the French toast:
- 4 thick slices of sourdough, challah, or brioche bread, a bit stale
- 2 large eggs
- 120 milliliters milk (or cream if you’re feeling extra indulgent)
- A pinch of salt
- Vanilla, to taste
- Cinnamon, to taste
- Orange blossom water, to taste
- Almond extract or liquor, to taste
- Butter, for cooking
- Strawberries, for serving
For the nutella:
In a food processor or blender, blend the roasted hazelnuts for 8-10 minutes, resulting in a smooth and creamy butter.
Add in the cocoa, powdered sugar, vanilla, melted chocolate, oil, and salt and process until the mixture comes together. To adjust the consistency, add a dash of oil or some cream for an even creamier version.
Store your nutella in a jar in the refrigerator for up to two weeks (where you will surely sneak spoonfuls of the stuff).
For the French toast:
In a large bowl, make the custard by whisking together the eggs, milk (or cream), vanilla, cinnamon, orange blossom water, almond extract, and salt.
Dip each slice of bread into the custard mixture, making sure both sides are fully coated. Let the bread soak for about 15-20 seconds on each side, depending on the thickness.
Add a knob of butter to a non-stick skillet and set over medium heat. Browning the butter a bit here gives an extra nutty flavor.
Once the butter has browned, place the soaked bread slices onto the heated skillet. Cook for about 2-3 minutes per side or until golden brown.
Serve topped with homemade nutella and strawberries, always keeping your body guessing about time zones.
